In the fall we have a tradition of going to pick apples as a family and with all the apples I make a wonderful (high carb high sugar) apple cake. I wanted to find an alternative to the bread I normally make with my extra apples. I know it is not fall but I had some extra apples hanging around that needed to be used so I thought no time like the present to figure it out.

Chicken was on-sale this week so I bought a family size package of boneless skinless breasts. I figured I could make something with it. So I tried two new ideas out, one is Chicken Stroganoff and the other is a new version of Chicken Nuggets. I would normally not toot my own horn but I must say this Chicken Stroganoff is awesome!

We had a birthday/Halloween party to go to this past weekend. When I go to a party or to someones house for a gathering I am always in fear that there will be nothing that is suitable for me to eat so I always prepare a dish to take with me (yes I check with the hostess first ~ it would be rude not to) I made my standard Chili but decided I didn\'t to eat that so I ran to the store and bought some Kale and made soup. It was very quick to make and was so good to eat. I was happy I made the soup since everyone liked it.

I have a 4 year old so Chicken nuggets are something I normally have in my house, between my work schedule and life in general sometimes I need to have something quick for dinner. So I decided to make my own chicken nuggets and freeze them.

The cream cheese gives this a bit of a sweet tangy taste you don't have in most salsa dips. Pick a salsa you like since that is where most of the flavor comes from. If you like a hotter taste you can always add additional hot sauce. I recommend using a crock pot to keep it warm while serving.
