Pizza my way !

Who says we can’t have pizza post op? I love pizza and so does my family.  I often feel bad that my daughter does not eat out often like kids in her class so sometimes I try to include more normal type meals into our diet. She loves home made pizza.. this is the standard in our house, you will notice I put the toppings under the cheese, I do it so that she can’t pick off what she does not want and they don’t get burnt.

Pizza

  • 1 low carb whole wheat tortilla
  • 1 tablespoon whipped cottage cheese
  • Garlic powder
  • Dried basil or Italian seasoning
  • 2 turkey meatballs cut into small pieces (I love the trader joe’s frozen ones!)
  • Diced bell peppers
  • Diced onion
  • Mozzarella cheese

Pre-heat your oven and pizza stone to 400. Top the tortilla with cottage cheese being sure to spread it thin or the pizza will be soggy and limp. Sprinkle with garlic, basil, bell pepper, onion and meatball then top with cheese.

Bake till cheese bubbles and tortilla is crunchy. I do have a cheat on my pizza toppings; I buy the pepper and onion pre diced from the freezer section so I can make a pizza as a quick meal.

Quick Chicken Soup

I have a 4 1/2 year old daughter who loves soup so I make this so we have something we can both eat and feel good about. I typically make meals in advance since we leave around 7 am and get home around 7 pm so between dinner, homework and bath time our nights are very hectic. This one re-heats well and takes about 10 to 15 minutes to make.

        Quick Chicken Soup

  •  Boneless Skinless Chicken Thighs ~ cut up in to small pieces
  • One bag of frozen mixed veggies (broccoli, snow peas, carrots and Cauliflower)
  • 1/2 chopped onion (if they have onion in your freezer section about 1/4 cup frozen) 
  • 1 bag Shiraki Tofu Spaghetti noodles ~ you can find them in the tofu section at most stores
  • 1 teaspoon fresh garlic chopped
  • 1 tablespoon Chicken Base (I use http://www.amazon.com/Better-Than-Bouillon-Chicken-Base/dp/B00016LA7K)
  • 6 to 8 cups water

 

Cook chicken in sauce pan with onion and garlic till chicken is cooked thru. Add in vegetables, water, chicken base and pepper to taste.  C0ntinue to cook soup over medium heat till the vegetables are completely defrosted and warmed thru. Rinse noodles well under warm water, make a few cuts in them with your kitchen shears so that they are not so long before adding to your soup. Stir, serve, eat and enjoy.
